Ingredients
  

  • 1/2 cup blanched almond flour
  • 1/2 large onion diced
  • 8 cloves garlic minced
  • 3 oz tomato paste
  • 2 tablespoons worcestershire sauce or substitute with coconut aminos
  • 2 large eggs
  • 1 tablespoon italian herbs
  • 2 teaspoons sea salt
  • 1/2 teaspoon black pepper
  • 2 pounds ground beef
  • 1/2 cup sugar-free ketchup optional

Method
 

  1. Preheat oven to 350°F (177°C).
  2. Combine all ingredients except beef and ketchup. Mix well, then gently fold in beef.
  3. Shape into a loaf in a baking dish and bake for 30 minutes.
  4. Spread ketchup on top, if using, and bake for another 25–45 minutes until internal temperature reaches 160°F (71°C).
  5. Let rest for 10 minutes before slicing and serving.

Notes

  • For extra moisture: Add 2 tablespoons of heavy cream or grated zucchini to the mixture.
  • Flavor twist: Mix in a tablespoon of Dijon mustard or hot sauce for extra depth.
