Ingredients
  

  • 1.5 lbs Roma tomatoes about 6, diced (3¾ cups)
  • 1⅓ cups diced green bell pepper about 1 medium
  • 1 cup diced white onion about 1 medium
  • 2 –3 serrano peppers minced (adjust to taste)
  • 2 cloves garlic minced
  • ½ cup chopped fresh cilantro
  • tbsp fresh lime juice from about 1½ limes
  • ½ tsp fine sea salt plus more to taste

Method
 

  1. Dice tomatoes and place in a large bowl with their juices.
  2. Add bell pepper, onion, serrano peppers, garlic, cilantro, lime juice, and salt.
  3. Mix well and refrigerate for at least 30 minutes before serving.
  4. Taste and adjust seasoning before serving. Serve fresh with tacos or chips.

Notes

  • For a smoky variation, replace serrano with roasted jalapeño.
