Ingredients
  

  • 2 medium sweet potatoes sliced into 1/4-inch rounds
  • 4 oz brie cheese cut into small pieces
  • 1/4 cup fresh or dried cranberries
  • 1/4 cup pecans toasted and chopped
  • 1 tbsp olive oil
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 1 tsp fresh thyme leaves optional

Method
 

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Pat sweet potato rounds dry and toss with olive oil, salt, and pepper.
  3. Arrange in a single layer and roast 15–20 minutes, flipping halfway.
  4. Top each round with brie and cranberries.
  5. Return to the oven for 3–5 minutes until brie softens.
  6. Garnish with pecans and thyme. Serve warm.
